Latin Seafood Salad
Makes 6 Servings
- 1/2 cup Olive Oil
- 1 Lemon, juiced
- 1/2 tsp.Ground Cumin
- 1/2 lb. each Large Shrimp, peeled and deveined, and Sea Scallops
- 1 Cup thinly sliced red, yellow and/or orange peppers
- 1 pkg. (4oz) baby peppers
- 1 small head endive, cored and separated into leaves
- 1 avocado, pitted peeled and cubed
Heat grill pan. In bowl, combine first 3 ingredients. In sparate bowl combine 1/4 cup oil mixture, shrimp , scallops and peppers. Grill 4 min., or until tender, turning once. Divide greens and endive amoing 6 plates. Top with grilled mixture and avocados. Drizzle sald with remaining dressing.
